2 tbsp vegetable oil or oil of choice
2 tbs of butter

Preheat oven to 375 degrees. Mix birch benders mix, water, and blueberries in a bowl until smooth. Heat 2 tbsp of vegetable oil and 2 tbs of butter in an oven-safe skillet over medium heat. Once slightly browned, pour mixture in skillet and cook for about 6 – 8 minutes. Batter will still look uncooked but edges should start browning. Transfer to oven and cook for another 10 minutes or until completely cooked through. Take out of the oven and let cool for a few minutes. Flip skillet upside down on a plate and pancake should slip right out. Drizzle with maple syrup and enjoy 🙂

Whether you want to write out your to-do list for the week, or track your fitness goals, bullet journaling can help keep you inspired. Ryder Carroll, a thirty-nine year old digital designer invented the bullet journal and it’s become a craze amongst many since. In his words, the bullet journal is meant “to help you track the past, organize the present, and plan for the future.”
The world is a messy unpredictable place. With current shelter in place mandates, a lot of us are experiencing anxiety and uncertainty. We’ve all been challenged to find our new normal. It’s easy to feel unmotivated but why not change the narrative. Start by practicing positive affirmations and write it down in your journal.
Don’t be so hard on yourself. There is no right or wrong way to bullet journal. They key is to start writing and see where the pages take you!

TIPS:
- Write out clues for where each item is hidden
- Hide a couple fun items like sweet treats for the kids
